Hi, I need to config one voicemail extention in english and one in spanish. Is that possible?

Yes you can record your own voicemail message for every extension. So whatever language you speak you can record it.

You could for example also use the digital receiptionist to answer a call after say 30 seconds. Than you can setup a menu like press 1 for english, press 2 for spanish.

The language for the automatic voicemail prompts is chosen by the trunk. So the language setting of the trunk where the call comes in determines those.
